Tuna Oatmeal Patties

Yield: 3-4 servings
Ingredients
- 2 chicken breasts, cut into cubes
- 1 medium-sized broccoli, cut into florettes
- 2 tablespoons oyster sauce
- 1 tablespoon extra virgin olive oil for frying
- pepper to taste
Instructions
1. Chop the raw chicken breasts into small cubes and make sure to remove any large pieces of fat.
2. Season the chicken pieces with pepper (and salt - optional). Set aside.
3. In a pan over high heat, add olive oil then toss in the seasoned chicken breast pieces. Cook for about 5 minutes or until the chicken is lightly seared.
4. Boil 1-2 cups of water, then in a medium bowl, add in the broccoli and pour the hot water in. Let it soak for 2-3 minutes or until the broccoli is cooked up to your preferred softness. Drain and set aside.
5. Add the oyster sauce and stir until all the chicken pieces are well coated. Then add the broccoli and stir well.
6. Transfer to a clean plate, serve, and enjoy! You can eat it as is or with hot steamed rice.

I already shared the recipe of Chicken Broccoli before, and it has been what I'm following whenever Mark would request for Chicken Broccoli. But since we started following the low-carb high-protein diet, I decided to tweak the recipe a bit.
And so I came up with one that is perfect for health buffs and weight watchers. It has minimal ingredients which means that it is easier to prepare and cooking time is lesser. Plus, it's low-carb and high-protein. Another recipe on how not to make chicken breasts not boring. :)
I only eat rice for lunch (at half a cup max) and pair it with 1 cup of the stir fry. Then for dinner, I'll have half a cup of the stir fry plus two hard boiled egg whites or half a cup of apples or cherries. :)
