Easy Shrimp Scampi with Sweet Potato Noodles Print Recipe

Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 3-4 servings

Ingredients
  • 1 200g-pack Del Monte Sweet Potato Noodles
  • 1 lb. shrimps, shelled and deveined
  • 5 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • juice of 1 whole lemon
  • salt and pepper to taste
  • fresh chopped parsley for garnish

Instructions
1. In a pan over medium high heat, add the butter and olive oil until it starts to bubble. Add the garlic and cook just until fragrant, about 2-3 minutes.
2. Add the shrimp and cook on both sides for 2-4 minutes or until the shrimps have turned orange.
3. Add the lemon juice and stir to coat the shrimp in the sauce. Season with salt and pepper to taste.
4. Add the sweet potato noodles, stir, and cook for another minute or two, or until the noodles are soft but not mushy.
5. Transfer to a clean serving plate and sprinkle with fresh chopped parsley. Serve and enjoy!

I've been meaning to cook shrimp scampi but because I also need to consider Mark's dietary needs, I had to think of ways to make it also healthy.

Shrimp Scampi with Sweet Potato Noodles 1

This Shrimp Scampi recipe is easy to prepare and delicious, plus healthy, too, as we're using sweet potato noodles, instead of the usual linguine, for added nutrition. I don't have the spiralizer so I just used store bought sweet potato noodles.

If you have the tools you may make the the noodles from scratch. 2-3 medium sized sweet potatoes should do. You may also use zucchini noodles or other veggie noodles as you wish.

If you want it to be healthier, you can also substitute the butter with olive oil and omit the salt. ;)
