Kriska Cooks: No-bake Blueberry Cheesecake

I so love cheesecakes and I've been wanting to make one. Unfortunately I didn't get the chance because I was busy the past few weeks.

I remember telling Gia weeks ago that I'll make her a blueberry cheesecake for her birthday, and so last Sunday, I lived up to my promise.

She loved it as much as the rest of the family did, so I'm sharing you this easy to prepare and delectable no-bake blueberry cheesecake recipe. :)

No-bake Blueberry Cheesecake


Ingredients:

crust:
1 200g pack Crushed Grahams 6 tbsp melted butter
2 tbsp confectioners sugar

filling:
2 200g pack cream cheese 1 1/4 cups thick cream

1/2 cup confectioners sugar 2 tbsp unflavored gelatin dissolved in 1/4 cup hot water

1 tbsp vanilla extract preserved or fresh blueberries for the topping

Preparation and Cooking Procedures:

For the crust, combine the crushed grahams and sugar in a bowl and mix well.


Add in the melted butter and mix until everything is well incorporated.


Press the mixture evenly over a pan.


Let the crust sit in the chillerr for around 15 minutes. Now we're ready to do the filling. :)

In a bowl, pour in the cream cheese, sugar, and vanilla extract and mix until well incorporated. You may also use a blender or electric mixer if you have one, but your hands and mixing skills will always be a good tool. :D


Fold in the cream, mix until smooth and add in the gelatin mixture.


The crust should be ready by now. :)


Pour the mixture over the chilled crust and refrigerate until set.


Top the cheesecake with preserved or fresh blueberries. Of course, you may use any topping that you wish. :)



Serve and enjoy!!! :D

Happy Birthday Gia!

Had a lot of fun yesterday with the family as we celebrated Gia's 24th birthday. Since Gia's birthday falls on the summer month, we usually, if not always, celebrate her birthday by having pool parties.


We would usually celebrate it with the whole family, plus the BFs, and our 2 cousins and Jaoey's playmates, Joyce and Jomel.


The kids had a lot of fun playing ball...


...and jumping into the water.


Even Jeff had fun jumping into the pool! Haha! :p


If there's one thing that we, the not-so-young, loved during the pool party, it's the lunch boodle feast courtesy of my dad! :D

Dunkin' Donuts Strawberry-Filled Donut

Up to now Dunkin' Donuts still remains to be the Pasalubong ng Bayan for most Filipinos. Whenever Gia's BF comes over at our house to for a visit, he will surely have with him a box of Dunkin' Donuts. Just like this morning, when Jeff arrived with this:

I also grew up having Dunkin' Donuts as a favorite. Aside from their Choco Butternut donut, the Strawberry-Filled donut is also one of my favorites. And its new look made me love it even more!

Pink is ♥♥♥!

The strawberry-filled donut used to be just plain looking before, with its white confectionery sugar coating. Good thing Dunkin' Donuts came up with this new look! :)


Now I'm loving this flavor even more! Yummy! :D

Piggin' Out with Gia and Jeff :p

After almost 2 days of clear-liquid-only diet, I finally got to eat! Pigged out earlier with Gia and Jeff after my Colonoscopy at Mega Clinic.

Since we can't decide what to have for lunch, we all agreed to dine at the food court.

We first stopped at Bodhi Vegetarian Health Foods. We had a hard time in choosing what to have, until we finally decided to just check out other food stalls, but I wanted to try the veggie meat barbecue so we had an one order of it. We didn't like the barbecue, the tofu was ok but the sweet asado-like marinade just didn't appeal to our tastes.

Went around and saw Balai Ilocos. Gia and I were delighted when we saw that they serve Ilocos Empanada. The empanada was like that of Ilocos Empanada in Katipunan, with mongo sprouts, and egg, but Balai Ilocos' empanada had sweet longanisa (which I didn't like). Gia and Jeff found it so tasty though.

We came across Sisig Hooray and finally knew what we wanted for lunch. :p This sinful pork sisig is just soooo good! It was oily though, but we all didn't mind. Oh cholesterol! Haha! :p

I was still feeling groggy from the IV sedation, but it didn't stop me from pigging out with my piggin' out buddies haha!

Just to set it straight, I only ate one rice :p

I wasn't able to eat for almost 2 days and I think it won't hurt if I delayed the doctor's advice for today and just start with having high fiber diet (or even going vegan) tomorrow. And besides, since tomorrow's a Saturday, I'll get to run and do aerobics with my mom. :p
