Mother's Day Lunch

Last Saturday, my daddy cooked fresh lumpia, tuna lumpia and tuna meatballs, and pancit bihon-canton.

We brought these luscious dishes over at my lola's house in QC and had an early mother's day celebration. :)

Mother's day came and so we handed our gifts to my mom.


I thought of making this Hershey's Kisses bouquet for her. Special thanks to my lil sis for helping. :)


We also wrapped some more chocolates and gave it to my mom along with a mother's day card and cake.



We went to the church to hear mass and then continued with the celebration at home with a lunch feast. :) Here are what we had for lunch:

I'm not sure what this fish is, I think it's Maya-maya. The fish was steamed and was topped with mayo and garlic. :)

Jaoey is a little picky when it comes to food, so fried chicken and lechon kawali were what he munched on.

It's the first time that we had paella at home and I was really fighting the urge to try this one.

But this was just so tempting that I had no choice but to give in! I had a spoonful of it, but it was so good that I went for a couple more! :p

Shrimps and Tuna

Some people find shrimps and tuna boring. Most of the time they can be seen in plates of people who are health conscious and body builders as well because they cling to shrimps and tuna as their source of protein.

But with a dad who's more than amazing when it comes to cooking, who said that shrimps and tuna are boring?! :p Here are what we had last Sunday, another seafood feast with Shrimps and Tuna as the stars of the feast.

The first dish that my dad made out of the shrimps was the Okoy or Shrimp Fritters. The shrimps were mixed with a batter (water, eggs, flour, and spices) and were then fried to perfection until crisp.

A dip into a mixture of vinegar, soy sauce, sugar, onions, and spring onions will surely make the Okoy more delectable. A very popular Filipino snack, the Okoy also goes well with a cup of steamed white rice. :)

Another shrimp dish that daddy made was the Nilasing na Hipon. The shrimps were marinated in brandy, they were then drained and breaded, and then deep fried until crisp and golden brown.

Daddy also made two tuna dishes: Tuna Meatballs and Tuna Sisig. He basically did the same mixture for both dishes...

...and just added in some mayonnaise and chili for the tuna sisig. Watch out for the recipes! Will post them soon. :)

To make the feast complete, daddy also added this equally sumptuous Mussels Soup.

Unfortunately I didn't get to taste each dish, so I still had veggies for lunch. I just had my mind do its work and imagined that I was eating those yummy shrimps and tuna! Hahaha! :p

Berries

Aside from vegetables, fruits have also been my best friend when I started on my vegetarian diet. :) I would usually much on mangoes, watermelons, melons, apples, and bananas all throughout the day. But yesterday was different, I got to have berries for lunch and dinner. :)

Berries are good for the body as they are packed with fiber and they contain a range of nutrients, such as Vitamins B and C. They are also a good source of phytonutrients and antioxidants which help the body fight against free radicals.

Tomatoes contain large amounts of Vitamins C and Vitamin A, which are both good for the skin. It also contains lycopene which acts as an antioxidant, neutralizing free radicals that can damage cells in the body. ~ WHFooods: Tomatoes


Aside from Vitamin C, strawberries are also an excellent source of Vitamin K, potassium, and omega 3. ~ WHFoods: Strawberries

Though very small in size, blueberries are packed with antioxidants. They are also very low in calories. Aside from Vitamin C, they also contain Vitamin E which is good for the skin. ~ WHFoods: Blueberries


I love eating berries straight from the chiller. :) Not only will it make me healthy, it is also a great way to beat the summer heat! :) So next time you're craving for something to munch, be sure to grab a bowl of fresh berries!

Easter Lunch

Easter Sunday is another important event that Christians celebrate. It is a celebration of the resurrection of Jesus Christ.

It also marks the end of the Lenten season, with means end of fasting and abstinence. A perfect time to have another lunch feast! :p

First on the table was Daddy's Chicken and Mushroom Penne. My dad used cream of chicken and added in Pechay Baguio strips, mushrooms, and chunks of chicken breasts. It's not like the usual penne pasta dish with cream and cheese, but grated cheese may also be added in for a more delectable treat.

Meat is a no-no during the Lenten season (or at least every Fridays), and I guess everyone was craving for it so my dad cooked this sinful Crispy Pata. Click HERE for the recipe. :p


He also cooked one of my favorites, the cream dory fillet with tofu in sweet and sour sauce. The tofu and breaded fish fillet were fried first and then the sweet and sour sauce (with mushrooms, pineapples, and onions) was added in. Carrot strips and chopped spring onions were also used for garnishing. :)

I guess everyone was happy that the fasting period, especially the abstinence from meat, is over. Except for me, of course, because I was advised by my doctor to have a vegetarian diet. I wasn't able to try out the Crispy Pata, Cream Dory, and Chicken, yes, but I still enjoyed my Easter plate! :)

Sunday Lunch

With a dad who cooks scrumptious meals, it's really very seldom that you would see us eat out. Aside from my dad being a critique when it comes to food, he also hates being in long queues and he easily gets mad with inattentive waiting staffs. If you spot us eating out, it just means that that restaurant is one of the few who has captured my dad's palates. :p

So on weekends, and everytime the family's all complete, we (most of the time, if not always) get to enjoy quality restaurant-grade-dishes in the comfort of our own home, courtesy of no less than my daddy chef. :p
