Cilantro-Lime Chicken with Avocado Salsa

Yield: 4 servings
Ingredients
- 2 tablespoons minced fresh cilantro
- 2 1⁄2 tablespoons fresh lime juice
- 4 (6-ounce) skinless, boneless chicken breast halves, cut into cubes
- salt and pepper to taste
- 1 1⁄2 tablespoons olive oil for cooking
- 1 medium-sized tomato, chopped
- 2 tablespoons onions, chopped
- 2 teaspoons fresh lime juice
- 1 avocado, peeled and finely chopped
- salt and pepper to taste
Instructions
For the chicken:
1. In a large bow, combine all the ingredients except for the oil. Toss and let stand for 3-5 minutes.
2. Add oil in a pan over medium-high heat.
3. Add chicken and cook 6 minutes on each side or until done.
For the salsa:
1. Combine all ingredients in a medium bowl and stir gently to combine.
2. Serve salsa alongside the chicken.

I’m sharing my go-to effortless dinner idea that only takes 30 minutes to prep and is perfect for weight watchers and health buffs.
With just minimal ingredients that are easy to find, a 3- to 5-minute dip into a pungent cilantro-lime marinade is all it takes to deliver big flavor to these chicken breasts.
What also I love best about this recipe is that it takes only 30 minutes to prepare: 5 minutes to marinate the chicken, 15-20 minutes to cook, and the rest to chop and assemble the avocado salsa.
This recipe typically calls for chicken thighs, but since I'm feeding a bodybuilder, chicken breasts are a must! You may also opt for lemon juice, but the freshly-squeezed lime is perfect with the cilantro and brightens the taste of the chicken and also adds that tinge and tang to the simple toss-together salsa.
