If you have left over pork or chicken in the fridge and you're sick of just having it reheated and served, instead of throwing away the food (which also means throwing away some cash :p), this recipe is the best for you.
Let me share with you a recipe of yet another tasty treat from my dad that will surely satisfy your palates. :D
Ingredients:
Preparation and Cooking Procedures:
In a pan with a little cooking oil, cook the garlic over medium heat until golden brown and add in the onions. Pour in the pork and chicken and add in the soy sauce and sugar. Add salt and pepper to taste. Mix well, cover, and simmer for 3 minutes.
The filling is now ready. :) Put the cooked filling on a clean plate and set aside.
For the crust, ideally, all the dry ingredients should be mixed first before adding in all the wet ingredients. But we can also do it using my daddy's technique, combining the ingredients all at once haha! :p
In a bowl, pour in all of the ingredients for the crust, starting with the flour, sugar, and salt. Add in the egg, butter, and olive oil. Knead the mixture into a dough while adding in the water one table spoon at a time.
Place the dough in a plastic wrap. A clean sandwich bag may also come in handy. :) Place the wrapped dough in the refrigerator for around 3 minutes.
On a clean flat surface, pour in some flour. Using your clean hands, roll the dough to make a log-shaped dough. Cut the dough into medium sized balls, it should be around 2 inches in diameter. Now we're ready to make some yummy treat! :D
Flatten the ball using a rolling pin. Put 1 1/2 table spoons of the meat filling. Hold one end of the flat dough and fold it over the other end, making a half circle out of the dough.
Using a dough cutter, or a plastic plate, trim the rough edges of the empanada. Seal the empanada by folding the edges towards the center.
Repeat the procedure until we fill in all the dough.
Heat pan and pour in some cooking oil just enough for the empanada to be submerged. Gently slide the empanada and then cook over medium high heat until golden brown. Flip the empanada to cook the other side. Cooking time is around 2-3 minutes.
Drain, serve, and enjoy!!! This recipe makes 17 medium sized empanadas. But of course there's no limit on how big you want your empanadas. :)
Other ingredients may also be added in like carrots, celery, and raisins. It all depends on your creativity and imagination, or whatever ingredient is available in your fridge. :p
